ALMOND ROCA

Bryce would like to share the secret recipe for Almond Roca that was given to him by an inside source at the Almond Roca Candy Company in Tacoma, Washington.
  • Butter 9" X 13" glass baking dish
  • 1 lb butter, less 1"
  • 2 cups granulated sugar
  • 1 cup almonds, sliced or halves
  • ½ cup chopped walnuts (optional)
  • 3/4 cup chocolate chips
  • Boil butter and sugar - slow boil five minutes, stirring constantly with slotted wooden spoon.
  • Add almonds. Keep stirring.  Approximate total boiling time 8 minutes. Mixture begins to get a brown tint when ready.  290 degrees on candy thermometer. 
  • Pour mixture into the buttered pan.
  • Spread out to a ½" layer in the pan.  Let cool slightly, then score in squares with a knife. 
  • Turn the pan over, and set on foil
  • Let candy mixture fall out of pan onto foil
  • Spread melted chocolate chips over the top
  • Add chopped walnuts or sliced almonds (optional)
  • Do not refrigerate. 
  • Let candy sit overnight before breaking into small pieces.
