CHICKEN WINGS

The Barbeque Sauce: Longhorn Barbeque Sauce from Safeway

Preparation 1:

  • Rinse and put wings in a baking pan sprayed with nonstick coating. 
  • Season with coarse black pepper and drizzle about 1/4 cup of olive oil over the chicken. 
  • Bake at 400 degrees for almost an hour. 
  • Take out of the oven and drizzle barbeque sauce over each wing.
  • Bake an additional 15 to 20 minutes and serve.

Preparation 2:

  • Prepare a mixture of 1/4 cup olive oil, 2 tsp. Italian Seasoning, 1 tbsp dijon mustard, dash of coarse black pepper, small amount of crushed garlic.
  • Mix well.
  • After rinsing chicken and placing in the baking pan, drizzle the above mixture over the chicken and bake for about an hour.
  • We don't use barbeque sauce on this one. It's good with ranch dressing. 
  • (This mixture also works for cut up red potatoes baked in the oven for 30-45 minutes and sprinkled with parmesean cheese then rebaked about 10 minutes and serve.

Both of these preparations are acceptable for lowfat diabetics.
