ZUCCHINI CASSEROLE |

Wondering what to do with all that Zucchini you'll harvest from your
garden (and the neighbors hide when they see you coming with an
armful?!!) Here's a delicious recipe.
2# Zucchini (4 cups) diced or chopped
1/2 cup Onion, diced
Cook above in microwave 12-14 minutes on high. Drain water.
Add: 1 cup Grated Cheese
1/2 pint Sour Cream
1 can Cream of Chicken Soup (undiluted)
In a baking dish layer: 1/2 pkg. Stove Top Chicken Stuffing Mix
(crumbs)
1/2 pkg. Herb Seasoning Packet
Add the 2 vegetables, sour cream, soup mixture next, and sprinkle 1
pkg. Mozzarella Cheese, grated, over top.
Mix together and put over top of all above: 1/2 pkg. Herb Seasoning
1/2 pkg. Stuffing Mix
1/2 cup melted Butte
Bake 350 degrees, 30-40 minutes
Add diced chicken or turkey to make this a one-pan meal. |
